Definately get an assassin. I've gotten one myself, and never wanted to go back (Well.. maybe once when he was level 1 and all my party was 8+, but still...) Put clearly, my assassin (now level 10, exactly at what level I re-trained my knight into assassin) hits once for as much damage as my knight did with 2 hits.

I don't have a druid (yet), so I can't comment about them.

As for the bats/phoenix thing, there isn't much you can do. You really should get more sorcerors. They're pretty much the only thing you can do against large groups of breathers. You might also want to spend more stat points in vitality. You're on your own. Remember, level 4 is the first real tough level. After that, it only gets worse. :(
