I did that once when I wanted to get rid of my rogue (my spellcasters learned DISARM) and he wasn't qualified to be much else. Just build a new sorcerer, and keep him away from breathers for a couple levels. Set whoever has the highest agility in your party against the breathers, so you can kill them before they attack. Make sure to rest up every time you can get your new sorcerer three or four levels, and he'll be caught up to the rest of your troop in no time.

Actually, I kept my rouge around beacause I need all the spell points I can get. Also, rouges gain levels quicker because of the disarming bonus.
