You can retrain them to be something else if you have enough of certain attributes, when you add points or do anything else with a character's stats, look over to your right and you should see a list of the various adventurer types and what a character needs to be any one of them.

What macrinus said. (I am currently playing a one-character game, and I retrained my character several times before I left the top dungeon level.)

If your character's stats allow him to retrain to any class, the "view character" page will have a "retrain" button. Clicking on it takes you to a place where you can choose a class or change your mind.
