I did that with a party of 3 Assassins. I don't remember how I got started, but it was probably all Knights because I wanted to have every combat advantage until the time came to retrain them as Assassins.

Assassins are definitely the way to go, since they gain AC the fastest and can eventually take out any group of 7 monsters in one round with their bare hands. Having 3 casters in the back row is useful in the early going, when spells hit more often than weapons and every round of combat is another chance for a character to die. When you're deep in the dungeon, I find that no matter what the three casters do, it'll still take an Assassin one more round of combat to finish off the group they targeted.

Other than that, the trick is leveling up as fast as possible. I think that's the reason I didn't add the three casters in the first place (that, and I didn't want to delete my 15 retired characters). A battle takes about as long with or without the three casters, but then your experience is divided by 6 instead of by 3.
