I'm going to have to post an official hint for this, because a lot of people are having trouble here, early on. I'm not all that surprised, really.

The trick is -- don't engage them! Run away from combat and try to find a way to double back and get around. Outmaneuver them in this manner just right, and you'll suddenly find the game a lot easier.
