The best way to approach these fights is to go through every option, and when the opponents position changes, write down the action that led you to that position, and then go through the process again.
For example, if the fight says, "Your opponent is preparing to punch you", go through every option, even if you think you'll get killed. (dying does not affect the game at all) Then, if you choose an option and it says, "Your opponent is on the ground, stunned", remember what got you there, and got through the list again.
