I've lost track of how many gold coins I've given, and I've traveled all over the map, checked out everthing ten or twenty times, and I am completely at a loss for what to do.

If you've had the sixteen hint twice, then you have used the sunstone somewhere. Do you remember the "Read it twice..." hint? That might be helpful to what comes next. But besides that, I'm afraid you'll have to scround around for another coin, and I have no way of knowing which one you're missing.
