I'm going crazy because I feel like I'm playing a different version of MOBH than everyone else. Any help will be greatly appreciated!

The head does have something to do with the headless knight. I don't think you need to worry about that quite yet. The birdseed is important! I think it's somewhere in the house. If it's not, try the pet store in the village, although I'm pretty sure it's in the house. If you haven't found it yet, then maybe you need to get something else before.
