Perhaps the reason your mental image of faces is "eyeless" is that in RL, you consider it rude to look directly into peoples' eyes when you talk to them? Which might mean, perhaps, that you've never actually studied what your acquaintance's eyes look like, in either colour or shape; so it's more difficult to fill in the missing gaps in your mental visual map.
