For me, the offensiveness of a joke (and conversation in general, for that matter) depends a lot on who's telling it to me. People I consider close friends can get away with practically anything. Acquaintances, no. I've only heard a very few jokes I considered offensive solely on their own merit, and most of them were more race-hatred stories than jokes -- ie, not funny to anyone but a total sicko.
We never had Polish jokes here; the Irish are the lucky ones. I have Irish ancestry and never found Irish jokes offensive in the least.
I'm mostly of Scottish descent, and my partner is mostly of Jewish descent. One of our mutual favourite jokes is one that makes fun of both. :-)
