Easy listening can be any kind of music. If you like it and it's easy for you to listen to, its easy listening. It depends on the listener and not the composer or artist.
Personally, I like classical, Dixieland, jazz, show tunes, pop, R&B, some country, novelty tunes, and just about all music. But RAP isn't music. The word means "talk" and that's what it is -- talk. So what if you can hear a beat in the background? Nobody is singing. If you insist on calling it music, then I don't like it. And that's my two pence worth. Howard
