It doesn't exactly matter how the "Medieval's" interpreted the Bible, does it? The Bible is destined to be deliberately misconstrued for as long as their are people with their own agendas. Because so many people follow the Bible, it is a great boost to one's personal agenda to try to show how, in some way, the Bible supports it. The problem is, the Bible is not that unclear. Jesus' teachings specifically and purposefully changed much of the Old Testament law -- after Jesus, the apostles did the same. Paul's letter to the Romans is all about how the Law of Moses was no longer in effect. If the Medievals chose to ignore it to justify witch-burning, it was hardly the Bible's fault.
