The trick is to return to the dining room at the correct moment in time. You've probably noticed that if you wander around outside, time passes until nightfall arrives, and then you have to find a place to sleep till morning. Note how long it takes for this to happen. Then, using that as a gauge, try to re-enter the hotel just *before* night falls. That'll be dinner time, and you can go through the dinner sequence again. Once you've gotten it once, remember what you did so you can do it again if necessary.
