Maybe he just wanted her as a replacement dancing girl, although if that was the case he shouldn't have dumped the previous one into the monster pit. I somehow can't picture a female Hutt as a dancefloor sensation, wearing a bikini or not. I guess when you live on a planet like Tatooine you just have to take whatever you can get in the way of exotic dancers.
On the other hand, Leia didn't strike me as being much of a dancer either. She never actually did any dancing for him, did she? So maybe it was some sort of interspecies fetish or trophy girlfriend thing. We won't get into what I thought about the gold bikini, though.
